The entire island is rocky with a mild climate and heavy rainfall – seawinds and high atmospheric humidity effects the grass, giving the milk a high acidity and a touch of saltiness. All cheese produced in Menorca has the D.O. mark, also Mahon cheese. Mahon is a cow’s milk cheese. It is aged from 2-5 months and has an irregular square shape with rounded edges. Mahon cheese has a creamy texture with a sweet and floral taste and small irregular holes. The smooth orange rind is rubbed with oil or paprika, it is compact and crumbly. Flavor: Very characteristic and defined, direct with slight hint of sea saltiness. It is the most characteristic cheese from Galicia, again easily known by its shape and smooth fine yellow strawcoloured rind. It is a soft cheese, thick and smooth with few holes – very creamy on the cheese plate. The flavor is clean and smooth, suitable for every taste. This cheese can be eaten daily at any time, preferably by itself or accompanied by the classic cheese table with spreads and bread. It is also suitable for cooking, especially stuffing and in recipes with topping as it melts easily with heat. Flavor: Milky, buttery slightly sharp and mildly salted. Soft texture, creamy and smooth.
