Furthermore, outside of Spain it is the most famous of Spanish cheeses. Protected Denomination of Origin (D.O.) Manchego categorizes a production using only milk from Manchega sheep, raised in the La Mancha region. This region is a vast high plateau, more than 600 meters above sea level. The shape of the cheese is very characteristic and defined according to the traditional use of esparto grass molds, which imprints a zigzag pattern on the cylinder sides. The cheese is ivory-white in colour with a strong, distinctive aroma and taste which intensifies the longer it ages. Flavor: Lightly acid, full, persistent flavor with sheep’s milk aroma. Slightly piquant and salty to the taste. Slight nuttiness and dried hay afternotes. Guadamur is based on sheep’s milk from other areas than the protected Manchego. Therefore, it does not have the D.O. mark and offers an interesting price level for many restaurants and consumers.
