White MOULD CHEESE White mould cheese, also referred to as Les fromages à croûte fleurie, is characterised by creamy velvety texture, excellent and unique taste profiles and notes that ranges from deep earthy wild mushroom to a mild and buttery finish. These cheeses have a perfect bloomy rind and a creamy centre. White mould cheese is typically made from cow’s milk with a creamy consistency and buttery taste notes. During the creation of the cheese, a white mould culture is added to the milk, causing a white bloom to grow in the surface of the cheese. The cheese then ripens in 4 to 9 weeks, depending on the desired texture, the longer it ripens, the softer texture becomes. Brie The world-famous French treasure, Brie, is known for its creamy and soft texture. The creation of brie can be dated back to the Middle Ages, when a French Emperor stopped at the priory and discovered the cheese. In fact, Brie became so famous in France that it used to be a part of the local taxes imposed by the King on the French citizens. Our Mon Ami brie is produced in an authentic French family dairy. This dairy was created in 1952, which actually started to collect eggs and farmer cream which was subsequently converted into butter. Five years later, the house began to collect milk to manufacture cheese of soft paste with a bloomy rind – also known as white mould cheese. TASTE NOTES: French Brie presents light hints of rural mushrooms and browned butter. Camembert The history of Camembert cheese derives from a French priest on the run, who taught a landlady from the Normandie his tips and tricks on how to make cheese, in gratitude for letting him stay at her home. Mon Ami Camembert is made from cow's milk that roam the pastures of France. It is, likewise Mon Ami Brie, produced in an authentic French family dairy that is dated back to 1952. Camembert has a rich aromatic and sweet flavour with hints of mushrooms. Compared to Brie, Camembert has a slightly firmer texture on top of being more acidic in flavour – which makes it great for various mild-tasting dishes as it adds an appetizing tangy note TASTE NOTES: Aromatic, creamy and sweet flavour which is slightly more intense than Brie.
