CREAMY PUMPKIN SOUP Creamy aromatic pumpkin soup accented with butter and thyme. SERVES: 4-6 INGREDIENTS: 80 g Emborg butter 600 g Pumpkin, peeled in cubes 120 g White onion, diced 15 g Garlic, diced 10 g Fresh thyme 600 g Vegetable stock 200 ml Emborg Perfect Pasta 1/2 tsp Nutmeg Salt/pepper for seasoning METHOD: In a large heavy-bottomed pot over medium-low heat, place the butter, onion and garlic inside. Gently cook while stirring often. When the onion has become soft and translucent, add the pumpkin pieces and fresh thyme. Cook and stir for 2 more minutes, then add the vegetable stock and Emborg Perfect Pasta. Increase the heat to medium and bring to a simmer. Once all pumpkin pieces have become tender - turn the heat down a little. Blend the soup smooth using a handheld immersion blender. Adjust seasoning and continue blending. The texture can be adjusted by adding more vegetable stock if it is too thick or it can be reduced over medium-low heat until it is as thick as preferred. Serve with chilli, bread, Emborg Sour Cream and toasted pumpkin seeds as desired.
