CRUMBED BRIE WITH SPICED PLUMS 10 servings Emborg Brie, 8 equal pieces each. Flour . Eggs, lightly beaten. Panko bread crumbs. 3 150 g 4 240 g SPICED PLUMS Plums, cut in wedges. Sugar. Whole star anise. Fresh ginger, sliced thinly. Cinnamon sticks. Vanilla pod, split. Bay leaves. Salt flakes and wood sorrel to serve 20 750 g 5 150 g 4 1 5 WARM BRIE DESSERT WITH MANGO AND COCONUT METHOD Place the plums in a large saucepan. Pour over the sugar and the remaining ingredients. The water should just cover the plums. Bring the plums to a gentle simmer an turn off the heat after 3 min. Let the plums cool completely in the saucepan, as the cooling time is a part of the cooking process. Keep the plums in airtight jars in the fridge for up to 4 weeks. Serve at room temperature. 10 servings Whole Emborg Brie (125 g). Mangoes. Fresh coconut, flesh part only. Green chili, very thinly sliced. Black sesame seeds. Clear honey. Lime juice. 5 3 250 g 1-2 2 tbs 150 g 75 ml METHOD Turn the oven to 160 ºC. Place the cheeses in small ramekins or other dishes of choice on a baking tray. Warm the cheeses until they are melted in the center approx. 15 min. They should feel very soft when lightly touched by hand. Toss the pieces of brie in the flour to cover completely. Shake off any excess flour and place them in the beaten eggs making sure the brie is completely turned in egg. Lastly cover in the panko crumbs. Heat enough oil in a heavy based saucepan to cover the pieces of cheese while frying a few pieces at a time. The brie should be golden and crispy before taking them out of the hot oil and onto pieces of absorbing paper towel. Sprinkle with salt flakes and serve with the spiced plums. Decorate with wood sorrel. Meanwhile prepare the mango and coconut fruit salad. Peel and dice the mangoes and place them in a mixing bowl. Finely slice the pieces of coconut and add to the mango. Add the chili and sesame seeds. Stir together honey and lime juice and add to the salad. Gently mix the salad so all the flavours mix together. Top the brie with the mango salad as soon as they are take from the oven. Serve left over mango salad in a bowl on the side. Crusty bread can also be served with this dish.
