WHIPPING UP A SUCCESS The creamy mild sweet flavor is excellent on its own and for a wide range of different flavor additions. The Emborg whip topping has a mild pleasant vanilla sweet aroma on its own – it can be adjusted to a sharper more precise flavor with a simple addition of grains of salt & drops of lemon. This must be added when the whip topping is whipped to 75 to 90% overrun. The sorbitol content and the fact that there is no sugar in the Emborg non dairy cream Whip Topping allows the following benefits: • The use of sorbitol makes it sugar free, leaving a slightly sweet aroma lending itself perfectly to all flavor profiles, necessary in modern and classic bakery-pastry shops. • Sorbitol absorbs the humidity from the air leaving the iced cake moist. This enforces the mouth feel and flavor profiles in final applications. It is also excellent to avoid cracks or unwanted lines on surfaces or rosettes. • The use of sorbitol inhibits bacteria growth versus regular sugar potentially increasing bacteria growth.
