Chilled butter freezes well, when carefully wrapped and protected. Re-chilling – Overly softened butter will become extra hard upon re-chilling, due to its fat content, but remain suitable for both baking and sauce making. Hygiene – Upon opening and working with the butter, it easily applies to HACCP regulations of 3-day storage, but even longer storage when working clean. Wrapping – Butter absorbs aromas very easily, ensure proper careful wrapping of butter when not using. To emulsify in sauces – Use very cold, cut in cubes for improved blending and emulsification. To whip into cookie and cakes – Allow the chilled butter to soften until a finger can make a shallow impression in the butter, but not pierce it.
