As needed Ground beef. 500 g Garlic minced.3 pcs (20 g) White onion chopped fine. 1 (80 g) Jalapeno pepper minced. 1 pcs Chili powder. 1.5 tsp (5 g) Salt. As needed Black pepper. As needed Tabasco sauce. 2 tsp (10 g) Chicken stock. 100 ml Black beans (drained). 1 can (250 g) METHOD Heat a medium nonstick skillet over medium to high heat. Add the olive oil then garlic, onion and jalapeno pepper to the pan and sauté 2 minutes. Add the minced meat and crumble while stirring with a wooden spoon. Season meat with salt, chili powder, cumin and tabasco sauce. Cook meat 5 minutes, till lightly browned all over, then stir in beans, chicken stock and reduce heat to low to simmer until well reduced and the meat is cooked through. Prepare the salsa and toppings of choice. Top nachos with beef sauté, salsa and toppings of choice. PICO DE GALLO SALSA Ripe tomatoes chopped. (150 g) Jalapeno pepper diced fine. 20 g White onion diced fine. 40 g Spring oinion sliced thin. 40 g Garlic minced. 5g Cilantro minced. 2 handfuls Salt. As needed Lemon juice. 1 tbsp Lemon zest. 1 tsp TOPPING CHOICES Emborg Sour Cream. 2-3 tbsp Scallions chopped. 1 tbsp Black olives sliced. 1/2 tbsp Red Capsicum diced. 1/2 tbsp Yellow capsicum diced. 1/2 tbsp Avocado diced. 1 tbsp Cheese sauce. optional Tabasco sauce. optional Salt.
